Agar-Agar E406
Agar-agar E406 is extracted from a red algae and has a strong gelling power. It is neutral in taste and odor, making it a perfect ingredient for your culinary preparations. In general, agar-agar is used as a substitute for animal gelatin.
To use it, simply bring your preparation to a boil, add the agar-agar (about 4 g per liter of preparation) and mix well for about 3 minutes. Then let the preparation cool. The gel forms once it has cooled.
To obtain a gelled texture, it is recommended to add between 0.2% and 1.5% agar-agar to your mixture. Note that agar-agar is much more powerful than gelatin: one sheet of gelatin, equivalent to 2 g of powdered gelatin, is equivalent to only 0.6 g of agar-agar.
The gelling strength of this agar-agar is estimated between 700 and 1000 g/cm², according to the supplier’s information.
Chef’s tip: To measure agar-agar accurately, the use of a precision electronic scale is recommended.
