Agar agar is extracted from a red algae and has a strong gelling power. It does not alter the taste or smell of your culinary preparations. Generally, agar agar is used as a substitute for animal gelatin.
To incorporate it into your recipes, simply bring your mixture to a boil, add agar agar (4 g per liter of preparation), and stir for about 3 minutes. Then let it cool: the gel will form after cooling.
It is recommended to add between 0.2 and 1.5% agar agar to obtain a gelled texture. Note that agar agar is much more concentrated than gelatin: a sheet of gelatin, equivalent to 2 grams of gelatin powder, corresponds to only 0.6 grams of agar agar.
